Chocolate Coconut Macaroons

Ingredients

1 1/2 cup coconut
1/3 cup granulated sugar
3 Tbsp cocoa powder
2 Tbsp unbleached flour
1/8 tsp salt
1 Tbsp. corn syrup
1 tsp vanilla
2 egg whites

Directions

Preheat oven to 325. In a mixing bowl, combine coconut, sugar, cocoa powder, flour, and salt. In another mixing bowl, combine corn syrup, and vanilla. Mix wet ingredients with dry ingredients just until moistened.

Using a small 1 1/2″ diameter ice cream scoop, place 15 small mounds of coconut mixture 1 1/2″ apart onto a prepared, foil-lined baking sheet. Bake for 18 minutes or until set.
