Cocoa-Oatmeal Cookies
Ingredients
1 1/2 cups sugar
1/2 cup margarine, softened
1/2 cup plain fat-free yogurt
1/4 cup water
1 t. vanilla
1/2 t. chocolate extract, if desired
2 egg whites or 1/4 cup egg substitute
3 cups quick cooking oats
1 1/4 cups all purpose flour
1/3 cup baking cocoa
1/2 t. baking soda
1/4 t. salt
1/2 cup miniature semi-sweet chocolate chips
Directions
Heat oven to 350 F. Mix sugar, margarine, yogurt, water, vanilla, chocolate extract and egg whites in a large bowl. Stir in remaining ingredients. Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 9 to 11 minutes or until almost no indentation remains when touched. Remove from cookie sheet. Cool on wire rack. Makes 5 1/2 dozen cookies.
