Welsh Cookies

Ingredients

3/4 pound butter
1 1/2 cups sugar
1/4 cup milk
2 eggs
4 cups flour
1/2 tsp salt
1 tsp nutmeg
1 tsp baking powder
1/2 tsp baking soda
1 cup dried currants or raisins

Directions

In a mixer fitted with the paddle attachment, cream together butter and sugar until light and fluffy. Add eggs and milk and mix until combined. In a separate bowl, combine flour, salt, nutmeg, baking powder and baking soda. Slowly add dry ingredients to the wet ingredients and mix until combined. Stir in currants.

On a floured surface, roll out dough to 1/4 inch thickness. Use a cookie cutter to cut out your favorite shape. Spray a non-stick skillet with cooking spray and fry the cookies until they are golden on both sides.
