Oatmeal Sandwich Cookies With Coconut Cream Filling

Ingredients

1/2 cup coconut oil (or butter)
1/4 cup brown sugar
1/4 cup sugar
1 egg
1/2 teaspoon vanilla extract
1 1/4 cups flour of choice
1/4 teaspoon salt
1/4 teaspoon baking powder
1/8 teaspoon baking soda
1 1/3 cups oats
2/3 cup of chopped dried tropical fruit

Filling:
3 oz cream cheese softened
3 tablespoons coconut oil (use butter if you don’t want coconut flavored creme)
1 tablespoon milk of choice
1/4 teaspoon vanilla
1 cup icing sugar
1/3 cup flaked coconut (optional)

Directions

Cream the coconut oil and sugars together in a large bowl. Then stir in the egg and vanilla.

Sift in the flour, salt, baking powder and baking soda. Mix everything together until a batter forms.

Fold in the oats and dried fruit.

Bake at 350F for 8-10 minutes until golden brown.

While the cookies are baking in the oven, make your coconut cream cheese filling by beating your cream cheese and coconut oil together. When they are combined, mix in the milk, vanilla, icing sugar and flaked coconut. Stir until smooth.

Allow the cookies to cool fully before spreading the coconut cream cheese filling between the cookies.
