Cinnamon Sugar Shortbread

Ingredients

1/2 cup unsalted butter, softened
1/4 cup brown sugar
1/2 tsp vanilla extract
1 cup flour
1/4 tsp granulated sugar
1 tsp cinnamon

Directions

Beat softened butter, brown sugar and vanilla extract until creamy. Add flour and beat until a soft dough forms.

Shape into a log and wrap in plastic wrap. Refrigerate dough for 1 hour.

In a bowl, mix together granulated sugar and cinnamon. Set aside.

Preheat oven to 375 degrees. Cut 1/4″ slices. Bake on an ungreased cookie sheet for 7-9 minutes in a 375 degree oven.

Remove cookies from oven and roll warm cookies in cinnamon sugar mixture.
