Lemon Almond Biscotti
Ingredients
2 1/2 cups flour
1 tsp baking powder
1/2 tsp baking soda
1 tsp salt
4 eggs, large
3/4 cup sugar
1 tbs lemon zest
1 1/2 tsp lemon juice
1 cup toasted almonds
Directions
Preheat oven to 325F. Line a baking sheet with parchment paper. Sift flour, baking powder and soda, and salt together in a mixing bowl. In another bowl, beat eggs and sugar together, then beat in lemon juice and zest. Add flour mixture to egg mixture and gradually mix together. Stir in almonds. On a floured surface, knead dough for 2 minutes. Divide dough in half and shape into 2 logs. Bake for 30 minutes, or until golden brown. Remove biscotti from oven and cool completely. Reduce oven temperature to 300F. Slice log into 1/2 inch slices, and put slices back on baking sheet. Bake for another 20 minutes.
